The shutters rise at 8:30 sharp. The first hour has its own rituals — khaman still warm from the steamer, jalebi coiled golden out of the kadhai, and sev khamani for the ones who know.

What began at Kankaria in 1995 with one steel steamer and a handwritten recipe is now a small Ahmedabad institution. The recipe hasn't changed. The welcome hasn't either. Only the map got bigger.
